Crisped Brussels Sprouts with Fresh Parsley

Every once in a while, if you spend any amount of time in the kitchen, you throw a few ingredients together and it just works! I got lucky one night cooking up these Brussels sprouts because that is what happened to me.

I have roasted Brussels sprouts many times before with usually just a little olive oil, sometimes a balsamic glaze but thats about it. I was looking through my Flavor Bible book that noted Brussel sprouts are good with parsley. And just before that I decided to add some bread crumbs because my breadcrumbs were getting prettttty old. The end product was incredibly crispy, refreshing, and so easy to eat. You can’t go wrong if you want to gobble up all of your veggies right?

Crisped Brussels Sprouts with Fresh Parsley

Crisped Brussels Sprouts with Fresh Parsley

Ingredients

  • 1, 10z bag (or about 2 cups) of shaved Brussels sprouts
  • 1-3 cloves of crushed garlic (based on your liking) – I use the frozen cubes from TJs
  • 1/4 cup bread crumbs
  • 1 tbsp olive oil
  • salt and pepper to taste
  • 1/2 cup chopped fresh parsley

Instructions

  • Preheat oven to 400 degrees F. Place shaved Brussel sprouts in large bowl and cover with olive oil. Add dried bread crumbs and mix well. Spread onto baking sheet and add desired salt and pepper.
  • Bake for about 20 minutes or until nice and crispy. Before serving, toss with fresh parsley. Serve right away!
